Look for recipes that require minimal ingredients, are quick to make, and are flexible enough to work for multiple meals. Set aside one or two hours a week to chop veggies, cook grains, and prep protein. Trust me, you’ll feel so much more relaxed during the week when you don’t have to scramble to figure out what’s for dinner every day.

Having the right storage containers is a game-changer for meal prep. I always recommend using clear glass containers or mason jars. They help keep your meals fresh longer, and you can easily see what you’ve prepped. Airtight containers are a must to prevent leaks and ensure your meals stay fresh throughout the week.

Mason Jar Salads: The Ultimate Make-Ahead Meal
Mason jar salads are one of my all-time favourite meal prep tricks. They’re not only super easy to make, but they also stay fresh for days when layered correctly. The key is to put the dressing on the bottom, followed by hearty ingredients like beans and roasted veggies, and leave the delicate greens on top. This way, your lettuce or spinach doesn’t get soggy before you’re ready to eat. When it’s time to dig in, just shake it all up, and you’ve got a fresh, crisp salad ready to go.

Lemon Basil Chicken: A Quick, Protein-Packed Add-On
If you need a quick, protein-packed add-on, Lemon Basil Chicken is my go-to recipe. I love adding it to my meal plans because it’s flavourful, easy to make, and cooks in less than 15 minutes. Whether you’re prepping for lunch or dinner, this chicken can be paired with any veggie, grain, or salad for a complete meal.
Storage Tip: The chicken will last in the fridge for up to 4 days, making it perfect for meal prepping. And if you want to stretch it even further, you can freeze it for up to 3 months!
Pesto Pasta: A Freezer-Friendly Favourite
Another one of my favourite meal prep dishes is Pesto Pasta. Not only is it quick to make, but it also freezes beautifully, so you can make extra batches and save them for later. To prevent the pasta from getting mushy when reheating, I recommend undercooking the pasta slightly and storing the pesto separately. This way, when you reheat it, the pasta stays perfectly al dente, and the pesto sauce stays fresh.
