Turkey Tacos with Apple Beet Slaw

Apple Beet Slaw Ingredients
- 3 beets, grated roughly 2 cups
- 2 apples, grated roughly 2 cups
- 3 carrots grated, roughly 2 cups
- ½ cup apple cider vinegar
2 tsp honey - 1 tsp caraway seeds
- ¼ tsp salt and pepper
Turkey Tacos Ingredients
- 1 tbsp avocado oil
- ½ yellow onion, diced
- 1 lb ground turkey
- 2 garlic cloves, minced
- 1 tsp ground cumin
- ½ tsp oregano
- ¼ tsp cayenne pepper
- ¼ tsp chili powder
- ½ tsp salt
- ½ tsp pepper
- 8 small taco shells
- Fresh cilantro for garnish
Directions
- In a large bowl whisk, together apple cider vinegar, 2 tsp honey, 1 tsp caraway seeds and ¼ tsp salt and pepper. Add grated beets, apples and carrots and toss to mix.
- Place avocado oil in a pan on medium heat. Add the onion and cook for 5 minutes until tender. Add ground turkey, garlic, cumin, oregano, cayenne pepper chili powder, ½ tsp salt and ½ tsp pepper. Cook for 10 minutes while breaking up the turkey until it is cooked through.
- Add turkey and apple beet slaw to each taco. Garnish with cilantro and enjoy.
NOTE: You will have leftover Apple Beet Slaw to enjoy on the side. You can also add toasted walnuts on top for a yummy side dish.
