Spelt Cinnamon Rolls Recipe with Vanilla Maple Glaze

Prep time:  25 minutes | Cook time: 15 minutes | Serving size: 9

Spelt Cinnamon Rolls Ingredients

  • ¼ cup nut milk at room temperature
  • ¾ cup coconut oil, divided
  • 1 egg, at room temperature
  • ½ tsp vanilla extract
  • ¾ cup coconut sugar, divided
  • 2¾ cups spelt flour, divided
  • 2 tsp baking powder
  • 1½ tbsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp cardamom
  • ½ tsp ginger

Vanilla Maple Glaze Ingredients

  • ½ cup icing sugar (process 1/3 cup coconut sugar)
  • ½ tbsp maple syrup
  • ½ tbsp nut milk
  • ⅛ tsp vanilla powder or extract

Directions

  1. Preheat oven to 350F and line a baking sheet with parchment paper.
  2. Whisk the nut milk, ½ cup coconut oil, egg, and vanilla in a medium-sized bowl.
  3. Mix ¼ cup coconut sugar, 2½ cups spelt flour and baking powder in a large bowl.
  4. Add wet ingredients to the dry ingredients and mix until everything is incorporated and rest for 5 to 20 minutes in the fridge until firm.
  5. Whisk together ¼ cup melted coconut oil, ½ cup coconut sugar and cinnamon, nutmeg, cardamom and ginger.
  6. Roll the dough into a rectangle that is roughly 1cm thick. Use the remaining ¼ cup of flour to prevent the dough from sticking to the surface or rolling pin.
  7. Spread the cinnamon sugar mixture over the dough using the back of a spoon.
  8. Roll the dough up and cut in slices using a serrated knife or wrapping unflavored dental floss around the roll and pulling it tight to cut the dough.
  9. Arrange the spelt cinnamon rolls on the baking sheet so they do not touch and bake for 15 minutes.
  10. While the spelt cinnamon rolls are baking, prepare the glaze by mixing the icing sugar with maple syrup, nut milk and vanilla. Once the spelt cinnamon rolls have cooled drizzle them with the glaze and enjoy.
