Sheet Pan Kofta Meatballs with Roasted Veggies & Tahini Sauce Recipe

Kofta Meatballs:
- 1 lb ground lamb
- 2 garlic cloves, minced
- 2 tsp cumin
- 2 tsp coriander
- 2 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp cinnamon
Roasted veggies:
- 1 yellow bell pepper, sliced
- 1 red bell pepper, sliced
- 1 small eggplant, diced
- 1 red onion, sliced
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp garlic powder
- ¼ tsp salt,
- ¼ tsp pepper
Tahini sauce:
- 2 garlic cloves, minced
- ½ lemon, juiced
- ¼ cup olive oil
- 1.5 tbsp water
- 2 tbsp tahini
- 1/2 tbsp cumin
- Salt and pepper, to taste
Garnish:
- Freshly chopped parsley
Directions
- Preheat your oven to 350°F and line two sheet pans with parchment paper.
- Prepare the Kofta Meatballs: In a large bowl, combine the ground lamb, minced garlic, cumin, coriander, paprika, salt, pepper, and cinnamon. Mix until well combined.
- Roll the mixture into meatballs, about 1 to 1.5 inches in diameter. This recipe should yield approximately 18 meatballs, depending on size. Place on lined sheet pans.
- Toos the yellow pepper, red pepper, diced eggplant, and red onion with 2 tbsp olive oil, 1 tsp cumin, 1 tsp paprika, ¼ tsp salt, ¼ tsp pepper. Arrange the veggies around the kofta meatballs on the sheet pans.
- Bake Kofta Meatballs and veggies for about 20 minutes or until the meatballs are fully cooked and browned, and the veggies are tender.
- While the meatballs and veggies are baking, prepare the tahini sauce. In a small bowl or food processor, combine the minced garlic, lemon juice, olive oil, water, tahini, cumin, salt, and pepper. Blend until smooth.
- Once the meatballs and veggies are cooked, remove them from the oven. Drizzle the creamy tahini sauce over the meatballs and roasted veggies. Sprinkle with freshly chopped parsley before serving. Enjoy as is or with a pita.
