Raw Mojito Squares Recipe and Video

Raw Mojito Squares are the perfect summer dessert because they don’t require cooking and they are cool and refreshing. I love them because they are sugar-free getting all of their sweetness from stevia, so they are perfect for people on the candida diet. Raw Mojito Squares are also vegan, gluten freepaleo, rich and delicious.

Health Benefits of Cashews

I love adding cashews to recipes because they add an awesome buttery creaminess. I added raw cashew butter to these Raw Mojito Squares, but you could also soak cashews in water overnight and blend them into a smooth paste.

Cashews also have a ton of health benefits like:

  • Being high in oleic acid which is a healthy monounsaturated fat that is important for heart health
  • Containing magnesium which is a mineral that helps regulate nerve and muscle tone
  • Promoting bone health due to high levels of magnesium, phosphorus, and copper
  • Helping you sleep due to concentrated amounts of sleep-promoting tryptophan

Raw Mojito Squares Recipe

(raw vegan, gluten-free, sugar-free, paleo)

Prep time: 15 minutes | Chill time: 2 hours | Serving size: 16 squares

Ingredients:

  • Zest of 2 limes
  • Juice of 2 limes, 6 Tbsp at room temperature
  • 1 soft avocado, roughly diced
  • ½ cup raw cashew butter, at room temperature
  • 1/2 cup fresh mint leaves, chopped
  • 1/4 tsp powdered stevia (to taste)
  • 1 tsp mint extract
  • 3 Tbsp melted coconut oil, melted
  • 1 cup raspberries

Gluten free crust

  • 2 cup pecans, raw
  • 1/2 cup shredded coconut, unsweetened
  • 1/4 tsp stevia
  • 1/4 tsp salt
  • 1/2 tsp vanilla
  • 6 Tbsp coconut oil, melted

Directions:

  1. Place the pecans in a food processor and pulse until finely ground.
  2. Transfer to a bowl and mix in the shredded coconut, stevia and salt.
  3. Add the coconut oil and vanilla and stir until mixed.
  4. Press the mixture into the bottom 8×8 pan lined with wax paper and freeze until the filling is ready.
  5. In a medium sized bowl, zest 2 limes and set aside 2 Tbsp of zest for garnish.
  6. In a food processor process the zest, lime juice, avocado, cashew butter, mint, stevia, mint extract and coconut oil and process until silky smooth.
  7. Remove the chilled crust from the freezer spread the mojito filling over the top then sprinkle with the remaining zest. Place back in the freezer and chill for 2 hours to set.
  8. Before serving, place the Raw Mojito Squares on the counter for 20 minutes or in the fridge for 2 hours to soften.  Then top with fresh raspberries and serve.
