Summer Pea Peach Salad
Summer Pea Peach Salad is bursting with bright summer flavours. Peaches make a delicious sweet treat, but they also taste delicious in savoury dishes like this pea peach salad. The sweet and juicy peaches pair really well with fresh summer sweet peas, creamy avocado, and crunchy sunflower seeds. Sometimes it can be hard to find sweet peas in a pod, so you can always use frozen peas that have been gently cooked.
Health Benefits of Peaches
I adore peaches, from their weird furry skin to their sweet juicy centers. Peaches are generally in season from July to September so I always stock up while I can because they have lots of amazing health benefits.

- Contain vitamin A which is important for eye health

Summer Pea Peach Salad Recipe
(gluten-free, dairy-free, vegetarian, nut-free)
Prep time: 10 minutes | Serving size: 3 meal servings or 6 sides
Ingredients
- 5oz mixed greens
- 2 diced ripe peaches
- 2 cups of fresh sweet peas, pods removed
- 1 avocado, diced
- 1 cup sunflower seeds
Dressing
- 1/4 minced shallot (2 teaspoons)
- 1/4 cup apple cider vinegar
- 1 tablespoon honey
- 1/2 teaspoon Dijon mustard
- 1/2 cup olive oil
- Salt and fresh ground black pepper
Directions
- Mix dressing ingredients together in a jar or blender. Set aside until ready to use, or store sealed in the refrigerator for up to 1 week.
- To make the salad, in a large bowl, combine the mixed greens, peaches, sweet peas, avocado, and sunflower seeds.
- Drizzle about 1/2 cup of the vinaigrette into the bowl and toss the salad gently but thoroughly to combine, then serve immediately.
