I know you have heard of carrot cake, but have you ever tried beet cake? The beets add pretty flecks of pink and earthy sweetness to the cake. The batter for this cake is a stunning pink which, unfortunately, fades when it is baked. I like to top this cake with a pretty pink glaze that is made with Greek yoghurt so it has a similar flavour to cream cheese icing that you would find on carrot cake. The first time I made this recipe was for a TV segment I did on Breakfast Television!

Let Them Beet Cake Recipe

Prep time: 15 minutes | Inactive prep time: 30 minutes | Cook time: 1 hour | Serving size: 1 cake

Ingredients

  • 2 cups spelt flour
  • 1 ½ cups coconut sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • ¼ tsp ground ginger
  • ¼ cup coconut oil, melted
  • 1 cup almond milk
  • 1 tsp vanilla
  • 2 large eggs
  • 2 cups grated beets (4 small beets)

Directions

  1. Pre-heat oven to 350F and grease a round cake pan with coconut oil
  2. Mix flour, sugar, baking powder, baking soda, cinnamon and ginger together with a spoon.
  3. Whisk melted coconut oil, almond milk, vanilla and eggs together until frothy.
  4. Add the wet ingredients to the dry ingredients and stir until mixed, then fold in the grated beets.
  5. Pour the batter into the cake pan and cook for an hour or until the toothpick inserted in the centre comes out clean.
  6. Let the beet cake cool for 30 minutes then top with the Pink Coconut Glaze below.

Pink Coconut Glaze

  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla
  • ½ tsp Himalayan salt
  • 1 cup icing sugar
  • 2 tbsp vanilla Greek yoghurt
  • 1/2 tsp beet powder
  • 1/4 beet

Directions

  1. Whisk together the coconut oil, vanilla, salt and icing sugar.
  2. Add the Greek yoghurt and beet powder until the desired glaze consistency is reached at room temperature. The coconut oil will liquefy at 24 degrees, so to ensure the proper consistency is reached prepare the glaze at the same temperature it will be served, adjusting the consistency by adding yoghurt or icing sugar.
  3. Pour the glaze on the cooled beet cake letting it drip over the sides.
  4. To make the sprinkles, grate 1/4 of a beet until you get little sprinkle like pieces and sprinkle them over the iced beet cake.
