Italian Breakfast Sandwich Recipe
Vegetarian & Nut-free
Prep time: 20 minutes | Cook time: 15 | Serving size: 4
Ingredients
- 1 tbsp avocado oil
- 8 eggs
FOR THE GARLIC BAGUETTE
- 3 garlic cloves, minced
- 1/4 cup parmesan cheese
- 4 tbsp olive oil
- 4 mini baguettes
FOR THE BRUSCHETTA
- 3 large tomatoes, seeded and finely diced 3 cups
- 1/4 cup fresh basil, chopped
- ¼ cup parmesan cheese
- 1/2 tsp apple cider vinegar
- ¼ tsp pepper
Directions
- Preheat oven to 350F and line baking sheet with parchment paper.
- In a small bowl, mix together 3 minced garlic cloves, ¼ cup parmesan cheese and 3 tbsp olive oil. Place baguettes on the baking sheet, top with garlic mixture and bake for 10 minutes then broil on high for 2 minutes
- Prepare the bruschetta by mixing together the tomatoes, basil, apple cider vinegar, ¼ cup parmesan cheese and pepper.
- Before serving, fry two eggs by adding avocado oil to a pan and heat to medium heat. Break the eggs into the pan and cook until whites are set, 3 minutes. If you like over-easy eggs, flip and cook for an additional 30 seconds.
- Top each garlic baguette with bruschetta and a fried egg.
NOTE: If making my Italian Breakfast Sandwich in advance to prep for the week, prep the garlic mixture and bruschetta in advance and store them in the fridge. Make the bake the garlic baguette and fried eggs just before eating.
