Chicken has been a staple of our diet for many years. In fact, it was one of the first animals to be domesticated for food. Although factory farmed meats should be avoided, when we look at organic pasture-raised chicken it is clear why it has stood the test of time.

Healthy Chicken Noodle Soup Recipe
(gluten-free, dairy-free, sugar-free, soy-free, nut-free)
Prep time: 15 minutes | Cook time: 30 minutes | Serving size: 6
Ingredients:
- 7 cups chicken stock
- 2 chicken breasts
- 2 bay leaves
- 1 onion, chopped
- 3 celery stocks, chopped
- 2 large carrots, chopped
- 1 garlic cloves, minced
- 1 Tbsp fresh parsley or 1 tsp dried parsley
- 2 cups gluten free noodles
- Salt and pepper to taste
Directions:
- Add the chicken stock, chicken, and bay leaves to a large pot. Bring to a boil, lower the heat and simmer for 5 minutes.
- Add the remaining ingredients, except for the noodles, and cook on medium for 25 minutes or until the carrots are soft.
- Remove the chicken breasts from the pot and shred with a fork.
- Add the noodles and chicken back to the pot and cook for an additional 5 minutes or as directed on the noodle package. If the healthy chicken noodle soup is too thick add additional stock or water.
- Season with salt and pepper and enjoy piping hot. If you want to kick your cold to the curb add a sprinkle of cayenne pepper.

This recipe was easy but my soup was really bland.. I definitely had to doctor this up.
I’m sorry to hear that. What kind of stock did you use? I make my own stock that simmers for hours with lots of herbs. It is so flavourful that it tastes yummy by itself. I find store bought stock is usually super bland and that could be why the recipe didn’t turn out for you.

I have a quick question, does the chicken need to be cooked before adding it to the stock?? Also, chopped or shredded? Thanks!
I put the whole chicken breasts in raw. After it cooks, in step 3 I remove the chicken breasts and shred them.
