Fish Tacos with Pineapple Salsa
I’m so excited to share my Fish Tacos with Pineapple Salsa Recipe! Tacos are perhaps one of the most crowd-pleasing dishes ever. I mean who doesn’t love tacos? One of my favourite things to order at Mexican restaurants is fish tacos. These fish tacos have crispy fish, sweet salsa, and creamy guacamole. They are simple to make and always a crowd pleaser- even the kids love them! Of course, I have to talk about the many benefits of this ideal meal.
Fish Tacos with Pineapple Salsa Recipe

Prep time: 20 minutes | Cooking time: 7 minutes | Serving Size: 4
Fish Taco Ingredients
- 1.5 cup almond flour
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 tsp cayenne pepper, skip if you don’t like spicy food or are serving kids
- 2 eggs
- 3/4 cup arrowroot starch
- 4 haddock fillets cut into long strips per fillet
- 3 tbsp coconut oil
- 12 small corn wraps
Pineapple Salsa Ingredients
- 1.5 cups finely diced pineapple
- 1 cup finely diced tomato, 1 tomato
- 1/3 cup cilantro, minced
- 2 tbsp lime juice
- 2 tbsp finely diced red onion
- 1/8 tsp salt
- 1/8 tsp pepper
Creamy Guacamole Ingredients
- 2 avocados
- 2 garlic cloves, minced
- ¼ cup fresh lime juice, roughly 1.5 limes
- ¼ cup cilantro, minced
Fish Tacos with Pineapple Salsa Directions:
- Make the pineapple salsa by tossing the ingredients together in a medium bowl. Set aside.
- Place almond flour in a shallow dish and mix with the salt, pepper and cayenne pepper. Scramble 2 eggs in another shallow dish. Place arrowroot starch in a third dish. Coat the halibut strips first with the arrowroot starch, then dip in the egg, then cover in almond meal.
- Heat coconut oil in a large frying pan to medium heat. Fry the fish for 7 minutes, turning every 2 minutes so all of the sides get crispy.
- While the fish is cooking, mash the creamy guacamole ingredients together in a bowl.
- To assemble, place a fish strip in the corn tortilla wrap. Top with guacamole, and pineapple salsa. Garnish with cilantro and hot sauce.

How to make nutritious meals for the whole family to enjoy
Let’s face it tacos are not only fresh and tasty they are a family favourite. Kids and adults alike love them. The reality is most of us can’t eat tacos every night of the week. Family-friendly meals may seem hard to come up with but it really doesn’t need to be complicated. I’m going to share a few of my go-to family meals that will even get those picky eaters excited for mealtimes.
Sometimes it’s about getting creative at mealtimes, how? Simple.
- Set the table, get everyone involved and make mealtime special. Light a candle or pick some calming music. Making dinner time feel fun is half the battle.
- Set the mood, you want the atmosphere to be calm. Set a positive, relaxing tone at the beginning of a meal. You might ask each person to share one thing they enjoyed that day or start a gratitude practice each mealtime.
- Talk about the meal, this one works so great with little kids. Instead of “eat your meat/veg etc” try this instead “did you know green leafy veggies make our bodies strong?” simple yet so effective.
These are just a few fun ideas to make mealtime more fun and exciting. Remember: If these efforts don’t immediately boost your children’s enthusiasm for dinner time, take heart and be patient.

Now that the table is set and the mood is calm you are going to need amazing meals to get you started. I have so many great dinner ideas, here are just a few I’ve selected. Check out these dinner ideas for kids that will please little ones and parents alike.
Dairy-Free Chicken Alfredo Pasta (pictured below) is a creamy gourmet dish made with nutritional yeast and cashews instead of heavy cream. The creamy pasta is laced with mushrooms, onions and spinach. It is easily made gluten-free if you use brown rice pasta. Such a classic meal and kids are crazy about it. It’s one of my favourite comfort foods.
Crispy Baked Chicken and Purple Slaw (pictured above) is a healthy spin on classic fried chicken and coleslaw. The chicken is breaded and baked to crispy perfection. The vibrant purple coleslaw has a Greek yoghurt dressing in place of the traditional mayo-based dressing. Kids and adults alike love the crunch of the purple slaw. The best thing about this meal? You can make this recipe start to finish in under 30 minutes! Win-win.
Healthy Chicken Noodle Soup Few things in this world are as comforting as a hot bowl of healthy chicken noodle soup. Everyone loves chicken soup! Not only is it a remedy for the soul, the broth itself pulls nutrients from all of the ingredients making them readily accessible to our bodies! This cozy healthy chicken noodle soup is packed with flavours that will transport you into grandma’s kitchen. Add some crusty bread slathered with ghee and enjoy a bowl of warmth.
Boneless Chicken Wings are a fun bite-size alternative to regular chicken wings. For many kids, it can be unappealing to eat chicken wings so I created this recipe. Boneless Chicken Wings have a crisp gluten-free crust and a juicy centre. You can dress them up any way you want by playing around with the sauce you use. Try adding a side of veggies and dip or try my Dill Pickle Fries, Sweet Potato Fries or Strawberry Arugula Salad with Strawberry Balsamic Vinaigrette all great family faves!
