Cloud Bread TV Segment
We all love bread, but it doesn’t always work with certain diets and lifestyle choices. On top of that, many of us are simply eating way too much bread! I’m so excited to show you Cloud Bread, a yummy gluten-free, low carb, high protein bread substitute that you can make at home.
During my segment on CH Morning Live, I show you how to make Cloud Bread and talk about 4 fun ways you can enjoy it. The segment originally aired on March 9, 2017.

Health Benefits of Eggs
My husband and I are egg lovers, we probably go through about a dozen a week. I love having eggs with my breakfast, I use them a lot in my baking, and when I make cloud bread. When buying eggs I highly recommend buying eggs that are either organic or from a small flock without the use of antibiotics or hormones. Here are some of the health benefits of eggs:
- High-quality protein because they contain a complete range of amino acids, which are essential building blocks in our bodies
- Good source of energy producing B vitamins
- I suggest eating both egg whites and yolks because the yolks are high in Omega 3 which is important for improving vision, relieving joint pain, and protecting against heart disease
Cloud Bread Recipe
(gluten-free, paleo, vegetarian)
Prep time: 1 minute | Cook time: 20 minutes | Serving: 6 cloud bread
Ingredients
- 3 eggs
- 1/4 tsp baking powder
- 2 Tbsp organic cottage cheese *optional
Directions
- Line a baking sheet with parchment paper and preheat the oven to 300F.
- Separate the egg yolks from the whites placing the whites in a large bowl and the yolks in a small bowl.
- Add 1/4 tsp baking powder to the egg whites and beat the egg whites until you see stiff peaks.
- In the small bowl, add organic cottage cheese (if using) to the egg yolks and whisk until smooth.
- Pour the egg yolk mixture over the egg whites and gently fold. Do not stir, this will cause the egg whites to fall.
- Pipe 6 rounds of cloud bread onto the baking sheet, or use a cookie cutter or ring molds for a more uniform shape.
- Bake cloud bread for 20 minutes or until golden brown.
