Health Benefits of Coconut

I love coconut!!! I put it in everything, from Chia Pudding for breakfast to Thia Green Soup for dinner.  The best part about coconut is that it is packed with health benefits.

  • It is really high in fibre which helps with healthy poops, stabilises blood sugar and helps you stay full

Chocolate Coconut Easter Nests

(Gluten-free, nut-free, dairy-free)

Prep time:  5 minutes | Chill time: 2 hours | Serving size:  12

Ingredients:

  • 2 cups shredded unsweetened raw coconut
  • ½ cup raw cacao powder
  • 2 Tbsp coconut oil, melted
  • ¼ cup honey
  • 36 organic jelly beans

Directions:

  1. Place all ingredients in a bowl and stir until mixed.
  2. Form into 12 nests on a baking sheet lined with parchment paper and place in the freezer for 2 hours.
  3. Once the Chocolate Coconut Easter Nests are solid, add 3 jelly beans to each before serving.

NOTE: The mixture doesn’t seem like it will stay together but as the coconut oil hardens it binds everything together.
