Chocolate Coconut Easter Nests
Chocolate Coconut Easter Nests are the perfect way to celebrate Easter in a healthy way. Nothing beats the combination of chocolate and coconut, especially when they come together in this fudgy festive treat. Chocolate Coconut Easter Nests are packed with fibre and sweetened with honey so they won’t spike your blood sugar or your kid’s. They are also super easy to make because they don’t require any baking!

Chocolate Coconut Easter Nests
(Gluten-free, nut-free, dairy-free)
Prep time: 5 minutes | Chill time: 2 hours | Serving size: 12
Ingredients:
- 2 cups shredded unsweetened raw coconut
- ½ cup raw cacao powder
- 2 Tbsp coconut oil, melted
- ¼ cup honey
- 36 organic jelly beans
Directions:
- Place all ingredients in a bowl and stir until mixed.
- Form into 12 nests on a baking sheet lined with parchment paper and place in the freezer for 2 hours.
- Once the Chocolate Coconut Easter Nests are solid, add 3 jelly beans to each before serving.
NOTE: The mixture doesn’t seem like it will stay together but as the coconut oil hardens it binds everything together.
