Chai Sweet Potato Soup
Today I’m sharing the recipe and video for Chai Sweet Potato Soup. It is from my new cookbook Healthy Homemade Soups & Sandwiches and it is perfect for dry winter skin. It has all of the delicious and warming chai spices that combine so well with sweet potatoes.

How Chai Sweet Potato Soup helps dry skin
- Sweet potatoes are super high in vitamin A which strengthens and protects the skin.
- Sweet potatoes are also high in vitamin C which smooths out wrinkles by boosting collagen production.
- Onions are high in sulphur containing compounds that help keep the skin smooth and youthful.
- Soup is also very hydrating, and a common cause for dry skin is dehydration.

Chai Sweet Potato Soup Recipe
(gluten-free, dairy free, vegan, paleo)
Prep time: 20 minutes | Cook time: 35 minutes | Serving size: 4 large servings
Ingredients:
- 2 yellow onions, diced
- 1 Tbsp coconut oil
- 3 big sweet potatoes, peeled and cut into chunks
- 1 apple, diced
- 1/2 a fennel bulb, diced
- 2 cloves garlic, roughly chopped
- 1/4 tsp cardamom
- 1/4 tsp cinnamon
- 1/4 tsp cloves
- 1/8 tsp nutmeg
- 1/8 tsp ginger
- 5 cups broth
- 1 cup coconut milk
- 1 Tbsp cider vinegar
- Salt and pepper to taste
Directions:
- Heat coconut oil to medium heat in a large soup pot. Add the onions and sauté until golden brown, 4 minutes.
- Add the remaining ingredients, except the apple cider vinegar, salt and pepper, and bring to a boil.
- Lower the heat and simmer for 30 minutes or until the vegetables are tender.
- Remove from heat, add apple cider vinegar, salt and pepper, and puree until smooth.
- Return to the heat adjusting the consistency of the Chai Sweet Potato Soup with water if required and adding salt and pepper to taste.
NOTE: When I made this recipe I used Kettle & Fire Bone Broth. I am affiliated with them because I really love how convenient and rich their bone broth is. If you are vegan/vegetarian you can always use homemade veggie broth.
