Ingredients

  • 2 tbsp avocado oil
  • 2 medium onions, chopped
  • 3 medium beets, peeled and chopped
  • 3 carrots, chopped
  • 3 cloves garlic, chopped
  • 1 tbsp fresh ginger, minced
  • 1.5 cups kidney beans
  • 4 cups veggie stock
  • Juice of ½ lemon
  • Salt + pepper to taste
  • Plain Greek yogurt (optional)
  • Fresh dill for garnish

Directions

  1. Heat the avocado oil in a large pot over medium heat. Add the onions and sauté for about 5 minutes until translucent.
  2. Add the beets, carrots, garlic, ginger, kidney beans, and veggie stock. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the beets are tender.
  3. Remove the pot from heat and stir in lemon juice, salt, and pepper.
  4. Blend the soup until smooth using an immersion blender or in batches with a regular blender.
  5. Serve warm, garnished with a dollop of Greek yogurt and a sprinkle of fresh dill.
