- Juice of ½ lemon
- Salt + pepper to taste

Directions
- Heat the avocado oil in a large pot over medium heat. Add the onions and sauté for about 5 minutes until translucent.
- Add the beets, carrots, garlic, ginger, kidney beans, and veggie stock. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the beets are tender.
- Remove the pot from heat and stir in lemon juice, salt, and pepper.
