I created my Vegan Blueberry Ice Cream Recipe because I wanted to enjoy ice cream that is actually healthy! I just love cooling down with ice cream on hot sunny days, but regular ice cream is loaded with dairy, artificial flavoring, thickeners and tons of sugar.

I know blueberries are the star of this recipe, but I have already covered the health benefits of blueberries in my Raw Blueberry Cheesecake Post. Bananas are the behind the scene star of this recipe because frozen bananas give the vegan blueberry ice cream an ice cream consistency.

Bananas on their own are the perfect grab-and-go snack. They are also a nutrient powerhouse that offer benefits like:

  • Being one of the best sources of potassium which is vital for maintaining normal blood pressure and heart function
  • Protecting the stomach against ulcers and H. pylori due to their antacid effect and activation of cells in the stomach lining
  • Helping you overcome diarrhea thanks to their high pectin content that regulated the movement of food in the digestive tract
  • Providing you with lots of antioxidants (vitamin C & manganese) to protect cells from free radical damage.

Vegan Blueberry Ice Cream Recipe

(Raw, Vegan, No Added Sugar, Gluten Free, Paleo)

Prep time: 5 minutes | Inactive prep time: 2 hours | Serving size: 2

Ingredients:

  • 1 frozen banana
  • 2 cup blueberries, frozen
  • ½ tsp minced fresh ginger, or ¼ tsp ginger powder
  • 2 Tbsp cashew butter
  • 1-2 Tbsp coconut milk, as required

Directions:

  1. Place the frozen banana, blueberries, ginger and cashew butter, in a food processor and blend until smooth.
  2. Add coconut milk slowly until you get an ice cream consistency.
  3. Serve immediately if it is still solid enough, or freeze for 2 hours so you can scoop it like “real” ice cream.
