BBQ Salmon with Grilled Corn Salsa is a recipe that I hope your family loves as much as mine does. I have a confession to make. I love BBQ salmon, my kids LOVE barbecued salmon. My family’s healthy obsession with this food is undeniable. I get my kids asking for salmon for dinner at least once a week. We’re so committed to barbecued salmon that we even eat it in the fall and winter (if it’s not snowing too hard). But for me, nothing says summer like a barbecue, and with this recipe, I’ve double-dipped on my grilling! I have tested tons of salmon recipes and this BBQ Salmon with Grilled Corn Salsa is one secret I had to share with you before fall sets in!

BBQ Salmon with Grilled Corn Salsa Recipe

Gluten-free & Dairy-free

Prep time: 14 minutes |  Cook time: 20 minutes | Serving Size: 4

BBQ Salmon Ingredients

  • 4 salmon filets, skin on
  • 1 tbsp avocado oil
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp sea salt
  • ½ tsp ground black pepper
  • ¼ tsp garlic powder
  • ¼ tsp dried oregano

Grilled Corn Salsa Ingredients

  • 2 ears of corn
  • 1 tbsp avocado oil
  • 2 cups cherry tomatoes, quartered
  • ¼ red onion, finely diced
  • 1/3 cup fresh cilantro, chopped
  • 1 garlic clove, minced
  • ¼ cup lime juice, 2 limes
  • sea salt and pepper to taste

Directions

  1. Preheat BBQ to medium heat, around 400F.
  2. Mix the chili powder, cumin, salt, pepper, garlic powder and oregano in a small bowl and set aside.
  3. Start preparing the grilled corn salsa by placing the tomato, onion, cilantro, garlic, lime juice, salt and pepper in a bowl.
  4. Brush the corn with avocado oil. Grill for 10 – 15 minutes turning occasionally until vibrant yellow.
  5. Check the salmon for bones. Brush both sides with avocado oil and sprinkle the spices on the side without skin. Grill salmon skin side up for 4 minutes, flip and cook skin side up for 6 minutes until opaque a flaky or it reaches an internal temperature of 125F.
  6. Remove the corn from the cob, add to the prepared salsa and stir to mix.
  7. Serve the Grilled Corn Salsa over the salmon and enjoy.

Why Salmon?

Why am I so salmon obsessed you might ask? Because salmon is a nutritional powerhouse. Salmon is rich in omega-3s, which makes it anti-inflammatory. Salmon’s vibrant pink colour indicates it contains the antioxidant astaxanthin, which suggests it has sun-protective effects (perfect for this time of year). Salmon is also a great source of nutrients like B12, magnesium, and vitamin D, and it is an excellent source of protein!

Salmon is a great choice when you’re in need of a mood boost! It is high in two types of healthy omega-3 fat, DHA and EPA. These fats play an important role in brain and nervous system development and can lower your risk of depression. Its Vitamin D content also makes it a major mood booster because insufficient levels of vitamin D have been associated with depression. Finally salmon is a great source of vitamin B12. A link has been found between depression and low levels of folate and vitamin B12 in studies of the general population.

Eating salmon regularly has also been shown to reduce blood pressure and cholesterol levels! What can’t salmon do!

Fact or Fiction: Is Corn A Health Food?

FACT! Corn is an awesome food with lots of overlooked health benefits. Firstly, corn contains fiber and water (especially if it’s steamed or boiled) which are essential for good digestion and good health. According to a 2017 national consumption survey, 95% of the US population does not consume enough fiber to maintain good health. Inadequate fiber intake has been associated with an increased risk of type two diabetes, obesity, cardiovascular disease, and cancers. This gluten-free, high-protein carb is an excellent way to help fill the fiber gap that so many of us might be experiencing! 

Corn is also a great source of carotenoids which are a group of antioxidants that help to protect the body from free radicals! There’s a reason why corn has been a staple food for indigenous cultures for thousands of years. And although our industrialized corn might have a slightly less dense nutritional profile, it’s still a worthy health food in my book!

Maple Pecan Salmon

This is another of my favourite sweet and savoury salmon dishes. I topped it with a sweet and crunchy pecan crust that gets a little bit of heat from cayenne pepper. A thin layer of Dijon mustard cuts the fishiness of the Maple Pecan Salmon and really brings together the flavours. This is one of my first recipes (maybe you can tell from the photo…) and it still holds up, get it here!
