Apple Cider Vinaigrette

Apple Cider Vinaigrette is a delicious and versatile salad dressing that tastes fantastic on just about any salad. The apple cider vinegar is balanced with just enough sweetness from the honey and a little zing from the mustard and garlic. I love to make “clean out the fridge” salads. I chop up all of the random leftover veggies in the fridge and throw them together with this delicious apple cider vinaigrette.

Apple Cider Vinaigrette Recipe by Alexis Nilsen

(gluten-free, paleo, vegetarian, no soy)

Ingredients

  • 1/2 cup apple cider vinegar
  • 2/3 cup walnut oil
  • 4 Tbsp lemon juice
  • 2 Tbsp grainy mustard
  • 2 Tbsp honey
  • 2 cloves of garlic, chopped
  • Salt and pepper to taste

Directions

  1. Throw the Apple Cider Vinaigrette ingredients into a glass jar and shake it up.

NOTE: If you don’t have walnut oil, extra virgin olive oil or any other nut or seed oil will work well.
